Lenten Reflection

From Give Up Worry for Lent!:

Unfortunately, sometimes we fail to se the Lord working miraculously in our lives. This may happen because we’re skeptical or it may occur because the miracles are rather ordinary. We sometimes attribute them to luck or happenstance, instead of divine intervention. The prophet Elijah knew better. When he prayed for rain in the midst of a three-and-a-half-year drought, the smallest fist-shaped cloud was all he needed to see. He knew that the dry spell was over and acted accordingly. The rain was on its way! Are you walking through the desert right now with no end in sight? Sometimes all it takes is a little pondering and some help from the Holy Spirit. You may suddenly discover that the Lord really is at work in your life.

Lenten Lentil Soup

Ingredients
1 clove garlic
1 medium onion, chopped
2 carrots, sliced
1 bag of lentils
8 cups of water or vegetable broth
1 bag of frozen of fresh spinach
1/2 (or more) teaspoons of allspice
salt and pepper to taste

cayenne pepper
shredded cheddar
croutons

Preparation
In a dutch oven, sauté garlic, onion, and carrots.

Add lentils (after you have sorted them according to package directions) and water or vegetable broth. Simmer for about 45 minutes, until lentils are cooked.

Add spinach, allspice, salt, and pepper. Simmer another 10–15 minutes.

Top with cayenne pepper, shredded cheddar, and croutons when serving.

Optional: add sliced smoked sausage or kielbasa along with lentils.
